Is there a definitive CV list out there?

Some decoders will write a value to a CV other than the one you programmed too just to liven things up :-)
Esu and Zimo decoders store information collected when a motor calibration run is carried out in CVs not listed in the manuals.
If it isn't listed in the manual for your decoder/software version then you don't need to know what it does.
 
Beyond the small number of standard CVs defined by NMRA I'd never "expect" a particular CV always to mean the same thing.

Which is why a software based programmer such as JMRI is so useful - it is configured to match the decoder being programmed (always assuming someone's created a template for that decoder)

Must admit I've still not yet looked to see if there are JMRI decoder definitions for the Marklin mfx series.
