You can use multiple together and a potentiate meter 5 to 10k ohm also cost next to nothing.
In the event that the motor will do full gas in one go or stop immediately, some simple resistor and capacitor network after your esc

I send a question to the seller what the motor is going to do after it gets his signal.

Got a replay back from the seller:

It seems that there must be some extra electronics after the receiver.
A simple 860uf capacitor up to minimum 18v will do the trick.
For higher speeds it would be necessary to implement a transistor network.
Better motion control add all three, capacitors resistors and transistors(condensators to smooth out)
If it is possible to replace those buttons with potentiometers he could not answer.

This would be very nice for kids play to control some cheap loco's or in the event if you want to have more loco's than a deltang could handle and or not high demanding on control but just drive.
