I am about to rewire my LGB EPL Point Motors, I have to power source, which I am content with, and I will be using conduit to get the cable from my garage to my motors, and rather than use lots of cables I am consider a "bundled". So at 16/0.2mm and at 2.5 amps, I think the current is sufficient, but is this a good option, thoughts please.

I have used similar previously, but it is prone to breaking I have found.
Yes - the Cat6 core wires don't take to being bent repeatedly, or to a tight radius.

I now use the Cat 6 as a 'trunk line' between distribution boxes at each end. So the Cat 6 is stable between fiddling about for major changes to track or junctions. I use multicore hook up wire from the distribution panels to the switchbox and point motors. I have just started using stackable 'Wago like' in line connectors so easy to rewire each end if required. Let's see how they last!
