It would be better to wire a couple of permanent sockets than use an extension lead, especially if you're using it for a kettle and aircon unit.
Try to check your lighting requirements, extreme LED lighting can be too extreme, and cause more shadows than you'd want. The best lighting is the old fluorescent tubes, but no longer available as they worked!

That looks interesting CATALOG | Mianne Benchwork Modular and expandable. Far cry from when I set up my indoor, scenic, Scalextric layout 30 years ago. Measured up and got a load of 2" x 2" and 10mm ply cut to size and delivered, then built as 3 units. Had at it with drill & countersink bits and load of woodscrews and glue, then coach bolted the units together.

Remember, you do not want to run anything that is "power hungry" off a 5 gang extension. It's too easy to get everything going at the same time and pop goes your house circut breaker. Here it's 13 amp (fused at the extension), US is 15 amp but reccomendation is 12 amp max load. As Paul says wall sockets for the power hungry stuff. A small 1kw heater pulls about 9 amps on 120v. Lighting - get a dimmer switch and LED's that will work with them. Some of the LED bulb designs are quite creative and retro' in their appearance and their lighting effects. Track - won't need much pinning to hold in place but do it to counter "hammer blow" effect, though minimal, of loco going into turns. The effect is cumulative and can shift or separate the track. My preference has always been for scenic backdrops, that's how I ended up in the garden :) It's amazing what you can order up, produced on large format printers outlets from stock images or your own, like a favourite trip. I assume foamboard is for sound deadening purposes, just make sure it and any fake grass is non flammable. Take a look here for some ideas Modular Layout Standards - Association of 16mm Narrow Gauge Modellers They run mostly live steam, and its modular, so some of it might translate. Max

Slot car track on 2"x2" and 10mm plywood, cut to size in a woodyard, delivered and then screwed together. And yes I used a 5 gang, but it just had a 1 amp transformer and 1 amp lighting system plugged into it. Could never get the whole lot into one shot.

Looking at the plan of your boards, it loksclike it would be fairly easy to rejig the layout and exttend the width by replacind 2 side booards with 2 of the middle boards
