Anyone seen this item would it be worth trying?

I've never seen that. What is the voltage output ?

Probably not. May be O.K. for analogue if you add a rectifier and only use the lower 10% of the dial, you don't want 240V on the rails! You could add a 10 to one transformer but IMHO you'd be better getting a conventional model railway controller.

What would you use it for in a model railway context? It outputs variable AC up to full mains voltage. It's no use as a track power controller. I can't think where I'd ever need something like that.

It you set the dial incorrectly the outcome could be shocking.

Would it work for a mains driven soldering iron for lower heat soldering like for white metal?
Yep, it will work well for resistive loads. Just bear in mind no temperature regulation will happen, so it will probably just take longer to warm up to a similar temperature.

Buy a temperature controlled iron, and some spare bits. - Keep some bits specifically for white metal.

Easier in the long run, and a lot more precise.

Moving slightly off topic - or back to it, I am beginning to think that the days of my Aristo-Craft Art-5470 are numbered - it's currently (sorry) putting out max volts and will not respond to the controller when I ask it to calm down a bit. I've changed the controller batteries, and no doubt pressed all the wrong buttons, or the right buttons in the wrong order, but that suggests it's time to spend a modest amount on a replacement, something a bit less complicated for my 77-year-old brain, or what's left of it.. (Would you believe I was once my firm's IT boss? - but that was just after they stopped using cassette tapes in office computers). I've got an ancient 1-amp LGB controller somewhere but maybe need something with a bit more oomph. My layout is basically a 28' long oval with a lot of sidings, so complexity is not an issue. All (polite) suggestions welcome...

Eaglecliff.... you should start a new thread..... it does not make sense to hijack an old thread on a different, specific topic...

You have a general question about power needed, and you should also mention the type of locos used, the length of trains, how many trains in order to get a recommendation on what power supply to get.
