My solution for logs, with a little weight, but not to heavy either, was to cut a cork floor tile into various width strips, glue together with PVA then sand with coarse sandpaper to and uneven logish diameter. Dry bush with assorted bark colours to finish. Next versions I'll try distressing further with a wire brush to hopefully get a more uneven texture.
If 'logs' are to stay permanently on flat bed or skeleton cars then I guess any 'log type' material, real or otherwise, is suitable.
I use cherry wood branches but will experiment with buddleja/buddleia this year (after reading a post by Chris M). All loads here are removable and most are; loads generally are usually one way only on the 'big' railroads so that is the case here.
